A very rare, early-maturing eggplant with large purple fruits, Za Hara Eggplant is ripe approximately 75 days from transplant! Fruits can be eaten in myriad ways such as baba ganoush, eggplant parmesan and roasted eggplant. Original seed obtained from Sand Hill Preservation Center passed along to Groundwork in Paonia, CO. 

Planting Instructions: Start Za Hara Eggplant seeds indoors 4 weeks before last spring frost. Transplant outdoors 2' apart after all danger of frost has passed and soil has warmed a bit. Keep soil moist during the hottest part of the summer. 

Seed Saving Instructions: Remove Za Hara Eggplant seeds from the tastiest, fully mature fruit. Or use a blender with a very low setting-- place fruits with plenty of water and slowly blend. Strain out seeds. Dry seeds on a screen or cloth. Store seeds in a paper or mesh bag in a cool, dark and dry location.
