Solanum lycopersicum

Days to Maturity: 90 from transplant

Finally, a reliable and abundant Colorado-adapted beefsteak tomato! Colorado Beefsteak's big, round, red fruits with dense meaty flesh are perfect for slicing for sandwiches, burgers and salads. The flesh is firm but has rich, mild acidic taste (unlike other mild and boring beefsteak varieties). A busty and vigorous indeterminate, they produced BOATLOADS of fruit-- we kept picking and picking right up until the frost!  Original seedstock obtained from JD Heirloom Seeds in Montrose.

Planting Instructions: Start Colorado Beefsteak Tomato seeds indoors under grow lights or in a greenhouse 6-10 weeks before last frost. Transplant 2+ weeks after last frost when soil has warmed a bit. Space plants at least 4 feet apart. Support growth with tomato cages, a trellis or wire. Water regularly but avoid overwatering (soil should be moist but not wet).

Seed Saving Instructions: When fully ripe, pick your tastiest fruits from the most vigorous plants. Cut open and squeeze Colorado Beefsteak Tomato seeds and juice into a jar. Secure a cloth over the jar so air can enter. Ferment the juice and seeds in the jar for 2-3 days. Then strain and rinse the seeds. Dry on a screen or cloth. Store seeds in a paper or mesh bag in a cool, dark and dry location.
